The Burleigh Bbq Championship is to be held on the 5th and 6th of August and admission is free, there will be bands ,food vendors ,bbq equipment vendors with the championship judging taking place sunday morning, 50 teams competing so it promises to be a great weekend. Thanks for the info,I smoked it at 210f until an internal temp of 155f then boated it with plenty of stock until 203f it probed like butter and was sensational. Unfortunately I am not very tech savvy so don't know how to post pics.

Whole beef shin

Hi all, I have a 4.2kg wagyu shin and I'm feeling a bit nervous about cooking it,I'll probably use the dalmation rub and cook it like a brisket,anybody got any other ideas ?

I thinkI get a 16kg box of the red bag heatbeads for $24 from Bunnings, the Redheads charcoal turds are $11 a box in Coles, 4kg ?

ave used Kingsford a few times but prefer the Red Heat Beads, I also use Redhead robot turds a lot and think they are great.
