Re: Radar Hill 20" Smoker Review
Offset BBQs generally use logs, but some people use lump charcoal. I currently use redgum lump charcoal for a couple reasons. First and foremost, it's what I'm accustom to from using other BBQs. I also have a UDS and Big Steel Keg which are charcoal (lump or briquette) only. I want to get familiar w...

Re: Radar Hill 20" Smoker Review
I was a little concerned about the casters on the left-side. However, in practice they work well enough. I rolled mine up bumpy pavers with no issue. Mine won't be moving around all that much, so I'm fine with them. I did consider, but didn't actually ask, requesting big wheels on both ends. I'd bet...

Re: Radar Hill 20" Smoker Review
Thanks Yakabot for putting up the pic. I'm going to try again on this post. If it works you'll see it is a dark'ish army green. Specifically Stove Bright Forest Green, but every picture of that paint on the net shows a slightly different of green! http://i16.photobucket.com/albums/b41/borneogoat/201...

Radar Hill 20" Smoker Review
It's been a while since I've posted much; too busy cooking rather than internetting! When I was researching my new BBQ Baby, I couldn't find much info on Radar Hill Smokers. So this info is for anyone contemplating their BBQs. Note: I'm not related to Radar Hill in anyway, just a happy customer. A f...

Re: Brisket & short ribs comming up
I don't remember the $/kg for the brisket or the ribs, but the whole pile was about $80. However, it fed 4x people on that night and still kept me in sandwiches all week long. An important thing to note, I buy from the Wursthaus factory direct store in Cambridge, not the fancy store in Salamanca. It...

Importing a BBQ, taxes, etc
I'm thinking about ordering a smoker from the US. This one, if you're interested: http://www.stumpssmokers.com/Products/VariableBurnPattern/TheStumpster.aspx . I've got a freight quote through the company I work for and I've requested one from Stumps. The next question is what happens when a BBQ sho...

Re: Brisket & short ribs comming up
Everything turned out great. The ribs were pulled off the BSK at 197F, because I was running out of time and the guests were starting to look like wolves. However, they were very moist and tender. Maybe they could be better at 203F, but I don't know how. Brisket was pulled at 203F, but they cooked q...

Re: Brisket & short ribs comming up
LA1, I'll roll with your suggestion of 203F and 8-10hrs. It makes sense and it will give me an excuse to have a beer in the yard at 08:00! Do the ribs benefit from a foil-wrapped rest in a esky for a couple hours, like some people do for brisket? How long you reckon these baby briskets would take? I...

Re: Brisket & short ribs comming up
Yeah, these briskets are babies. I'll ask the butcher ahead next time and get bigger hunks. For this BBQ I gotta work with what I got. I've got a couple photos, they sure look tasty! A quick check of the internet for ribs suggests a pretty wide range of internal temps. Any idea how long to get these...

Brisket & short ribs comming up
I've got myself 2x 1.2kg small briskets and 2.5kg of short ribs from my local butcher. Cape Grim beef, so it should be very tasty! I'll be low and slowing them. My last brisket was on the dry side, but this time I will inject some broth, use the foil crutch, and rest in an esky to keep them moist. I...

Re: pulled pork / brisket flavours
I'll kick in, as yank who lives in Aus now. Part of the appeal is the gazillion different sauces. But the other part is just the love for the taste of the meat. Many people in the US, particularly in Texas, avoid sauce because they love the "meat taste". And its hard to argue with just goo...

BBQ for small spaces
Found this today while roaming the web. Would have been a great BBQ for my previous tiny balcony apartment. I'm contemplating it for my boat now....

Re: Reber sausage stuffers V the rest
I finally put my money where my mouth is and ordered a Reber 3kg off Fleabay last week. I debated back and forth over an italian vs chinese machine for quite a while and finally decided to spend the extra dosh for the Reber. Upon opening the box I got a great surprise! Ordered the red enameled steel...
