Took a bit longer than I had planned for. About 20kg of pig. The part I seem to struggle with is working out the right distance above the coals. I think I was a bit overly cautious.... That seems like a long time on the smoker for what looks to be mostly the flat of the brisket? Unless I'm just not looking at it right in the picture.
