Hi, I have pruned one of my olive trees, do I need to wait until it dries to use in the smoker? First time trying it, been using blood wood timber. Went great with a brisket, beef and pork ribs, chicken thighs, fish wings and best of all was the kangaroo.
Have been using the smoker alot over the last few weeks, chicken thighs wrapped in bacon, beef and pork ribs, whole brisket and kangaroo meat. Trialling different timber and recipes, anyone have a favourite recipe that you use in the smoker?
