Where do you place your temp probe?

Was wondering what peoples experience is using rib racks? I've burnt two sets of ribs using racks to a crisp. I believe it's because of improper placement of my temp probe on my weber kettle. Because the ribs are upright, hot air rises and is hotter at the higher segments of the ribs, causing it to ...

Re: Ribs keep coming out dry

How do you determine the 250f temp? if using the kettle's gauge, it is likely to be incorrect, so your problem could be too high a temp. I'm using a separate thermometer. Sometimes I think it's a little off. For example, it took 1.5hrs to get to 225f. I put the meat on and five minutes later it's r...

Ribs keep coming out dry

Gday pitmaster, Last couple of attempts at pork ribs have come out a little dry. I suspect I am overcooking them. Following the 3 2 1 method on my weber kettle, cooking at roughly 250f. So cooking them for 3 hours, then wrapping them for 2 hours, and resting for 1 hour. Haven't used a thermometer to...

Re: Advice appreciated on my first Brisket - Dusty Moose Smoker

I've done several briskets and I've found better results cooking at 250f, tends to bypass the stall a little better. I tend to look for more fat in the middle when buying, if it's too lean it will come out dry no matter what you do. I've never spritz my brisket so can't comment on that. Sent from my...

Re: Bought charcoal?

Yeah the heat beads brand is good, the red bag lasts for hours. They easily last me 8 hours when I'm doing a brisket. Pretty cheap from supermarkets and bunnings.

Re: Do you find it hard to maintain low temp in the weber kettle?

I think using 12 briquettes at the start is the problem. Too many lit = too much heat. I use 6 and it works fine. I've used green. Burns lower temp. Made different to Red. Different smelling smoke. They're ok. The main problem I found is that they are more expensive than red. That's true. I'd say t...

Re: Do you find it hard to maintain low temp in the weber kettle?

If you're doing a low and slow make sure you don't light up too many briquettes in the beginning, fill it up with water, don't put too many wood chips and chunks in, thread your thermometer lead through the top and not the side of the lid as it will lift the lid and let too much air in. I found the...

Re: Do you find it hard to maintain low temp in the weber kettle?

I don't have one, but how are you using your S n S, are you using the minion method? I have used the snake method in the past with success and I was able to keep the temps to the 100-110°C. Yeah I'm using the minion method. I've used the snake in the past but I got the s n s as a present so using t...

Do you find it hard to maintain low temp in the weber kettle?

Hey guys, I always find it hard to get my weber kettle to settle on 225-250F/110C. My temps are often too high about 290F even with the vents 1/4 open. Im using the slow n sear as well so a bit confusing.

What starter cubes do you use?

I use the jiffy brand from Woolworths, I've also use the redheads cubes. I found these only last 10 or so minutes.
Can anyone recommend anything better?

Cheers
