Re: Recommend me a high quality brisket supplier in Sydney

If anyone is out Campbelltown way, Adam at Haydons Quality Meats is a great butcher and knows his stuff. Ask him for his best piece of brisket for your smoker and you will not be disappointed. He also has quality rump that he cuts up thin and evenly for great beef jerky if your into that sort of thi...

Re: Weber Jumbo Joe Kettle

When drinking with a few of the boys my Smokey Joe is the preferred bbq to cook on for reasons you put forward. Wacking lamb chops and spiced wings on in small batches for hot and fresh eating straight off the grill, with time in between to enjoy the beers and banter, I find this is the best way to ...

Re: Bought charcoal?

Heat beads every day of the week (red bag), and as the others have said various set up methods used if slow cooking.
Or for normal cooking or spit roasting etc I like to use gidgee hardwood charcoal as I find I get a solid 4 hours out of a burn

any hunters out there? SYD

Wondering if anyone from Sydney likes to get out for a hunt?
We obviously all share a passion for bbqing and eating meat- If anyone wants to team up for a deer or goat hunt to assist with this, send me a msg.

Ps: I hunt state forests so an R Licence will be required.

Re: Lamb on the spit

Why is all the foil around it (I don't have a big rotisserie) Happy BBQ-ing, Paul Makes cleaning up quick and easy and leaves the spit looking new. There can be a bit of oil/fat drip, splash when basting and cooking and generally just makes everything sticky so for the sake of $1 worth of foil and ...

Re: Lamb on the spit

I remember paying $6-7 a kg for whole lamb around 10 years ago.
It’s around the $14/kg mark now...
This makes me feel old!
Hopefully the farmers get some good rain and we can feel the benefits!

Sausage making

Hi I want to start making my own snags. Mainly because I can’t find a chilli beef sausage hot enough for my liking but also to experiment with different flavours. Can anyone tell me what the benefits are for using a sausage filler vs a decent electric mincer with filler attachment? I would only be m...

Re: Spits for whole lamb

I had a look at the models a www.bbqspitrotisseries.com.au/ . Decent quality but available sizes were 1200mm and 1500mm. One might be a touch small, the other too big for my needs. In the end went with one I found at www.thebbqstore.com.au/ which was a whole lot cheaper. Its most likely chinese made...

Re: New 7.5kg Original Heat Beads now at Bunnings

Woolies in Sydney had a sale about a month or so ago and 4kg heat beads where about $5.75 from memory and I picked up half a dozen or so bags. I might have used one bag only so far as I prefer cooking on gidgee.
Just picked 6 x 18kg bags from Tennco you just can't beat this stuff!

Re: What surface do you use to start your chimney?

Get a 300x300 or similar concrete paver from flower power for about $6
Or keep a look out on Gumtree for something similar being given away.
I use this as a base to put my fire lighter and charcoal chimney on sometimes.
