Tried this technique last night quite good I was surprised that you do need that amount of time to get the breast up to temp, meat was nice very hard to render all of the fatty deposits but the marinade was a winner, cheers

mate buy a good temp gauge it will be the best thing you ever did for your cooking and you will soon wonder how you ever did without it

well this time I let it get close to temp running at 160c then turn it way down and they sat at around 80c for 1/2 hr which really makes a difference
Brining the Legs is a real cheap dinner for family at less than $10 for 1.75kg pretty good feed

Haven't done Turkey Legs for ages and when they stared at me in the Shop the other day couldn't say no. I will brine during the day but I remember reading to get Poultry to be more "fall off the bone" you need to hold it at about 80c for 1/2 hr or so? So what temp do I cook them at to achi...

I finally had a go at a Sous Vide Oyster Blade. Yeh I agree with chrisg they are a brilliantly versatile tool in woodworking but never ever loose your concentration No1 priority is always where your hands are positioned, then your body, then your work piece and above all do not get distracted if so just turn it off but with lots of practice it is...
