Re: Lamb ribs

Absolutely it is appropriate and delicious. I cook mine on my q300 with an amaze n smoker tray for 2 hours at 120 then foil for an hour. Then take them out of foil and glaze for another hour. Make sure you trim off any excess fat that won't render down and remove the membrane from the inside of the...

Re: Duck on a Q

Tried this technique last night quite good I was surprised that you do need that amount of time to get the breast up to temp, meat was nice very hard to render all of the fatty deposits but the marinade was a winner, cheers

Re: Weber Q control setting

mate buy a good temp gauge it will be the best thing you ever did for your cooking and you will soon wonder how you ever did without it
Something with an ambient and food probe believe me you will never look back.
The Maverick series are great

Re: Turkey Legs?

well this time I let it get close to temp running at 160c then turn it way down and they sat at around 80c for 1/2 hr which really makes a difference
Brining the Legs is a real cheap dinner for family at less than $10 for 1.75kg pretty good feed
cheers

Re: Turkey Legs?

Haven't done Turkey Legs for ages and when they stared at me in the Shop the other day couldn't say no. I will brine during the day but I remember reading to get Poultry to be more "fall off the bone" you need to hold it at about 80c for 1/2 hr or so? So what temp do I cook them at to achi...

Re: Veal Rump Roast, How to cook?

Thanks mate will give it a try
Veal is very mild tasting so a good marinade first similar to Steak with L&P, Balsamic, B Sugar, Salt and Olive oil?
or something different more just a dry spice mix?

Veal Rump Roast, How to cook?

Hi all, again I am seeking some simple advice regards a cut of meat. I was at The Meat Emporium today and decided to buy a Veal Rump Roast only small bit over a kilo with a nice fat cap on one side, how do I best roast this piece?
