I,m starting to use rubs more for the Bark only.
Mind you there are rubs and Rubs , I keep away from over salty to over sweet.
Rubs should complement rather than overpower

Smoked Beef Shanks

I figured these should cook like Lamb shanks and they did, they are delicious. Smoked for 7 hours around the 125c mark, bit up and down. Wrapped for an hour with the drippings because my snake ran out. Rubbed with oakridge Snata Marie seasoning. Pictures tell it all https://photos.smugmug.com/Basic-...

havent used one but!
go back and have a look at the fitting together of them.
the ones I saw have gaps, to me thats a sign that they will not last, especially if they get moisture nin them.
