After careful consideration, I am leaning toward the smaller unit, mainly because I need to store it easily when not in use, also there is unlikely to be many opportunities to cater for 50 plus at a time. thanks everyone for great input. After careful consideration, I am leaning toward the smaller unit, mainly because I need to store it easily when not in use, also there is unlikely to be many opportunities to cater for 50 plus at a time. thanks everyone for great input.

Ok, you need to understand. I don't just have one oven, I have three, a 3 ft wide stove with 6 burner gas. A steam oven, and a wall oven, this does not include my BBQ and pizza oven or my sous vide. I will cook for 5 to 50 .... (The 50 not so often) entertaining for me is at least 6 but 15-20 is fin...

Have you considered using a quality Ham Knife, vs carving knife? The length means longer more even (thin) slices.

Personally I wouldn't give it shel space. Buy a "Real" one. It will change your life. ..... Well maybe not, but the right tool will mean the right result. ( I use Sous Vide Supreme).
