I have built 2 drum smokers there unreal. Good on fuel like 1bad heat beats will burn for 20plus hours. And they produce great bbq.

Do a vertical drum smoker coals in the bottom in a basket. 2 to 3 racks can buy at bbq calories. I also put doors on the front of mine so I can add wood chunck. Or can even use as a stick burner. They work pretty good as well.

Hey there i saw on a cooking show a couple of months ago where they made a tandoor bbq oven from to large clay pots. Coals in the bottom 1 place second on top. Make a rack for the middle or use metal rods to put the meat on.

Correct so around the 18 hours depending on temp of your pit and how well it holds temp at 225 to 250. Also allow a good hour to start your fire and get to temp. And you can always wrap at the 150 mark to help speed up the stall. Check your brisket at about 193 for tenderness and pull it around the ...

Hey there when i was using my kettle i also used two tin cans about the size of beer cans they where my water pans didn't take up much space. Should also help keep them tender.

Hey there looks pretty good i normal start checking mine at 185 with a skewer and feel the brisket for tenderness not just rely on temp. Also done my first brisket on a uds i build. I found it smokes heaps better using a water pan.

There is nothing at all they can do. As you can have small backyard fires and BBQs which are wood fired. The only things you cannot to is burn off rubbish or use on a fire ban. Happy days smokin i say and there only renters so they can always move

Hey guys if you put the brisket in the foil tray at the start of smoking fat side down it will have its own juice and you can cover with foil when you hit temp without adding anything else. Flavour from the meat and rub will do the job for you and it will make more juice once cover.

Hey guys done a 4kg beef rib on the weekend used sheoak 2chuncks and 1chunk banksia worked great. Anyone else using sheoak and banksia for smoking. Also aging some coastal wattle to try out soon
