It was actually a piece of silverside. I gave it a good wash down and pat dry. Then made a wet rub of Worcester sauce and mustard. I smoked it for a couple of hours then covered it and cooked for another 3 hours. I made a simple gravy with the juices but added brown sugar to counteract the saltines...
