I agree this forum is finished, but has some great knowledge to look back on, so move on all and keep this for information only, the other forums a active and some great people and advice to be had

The pork neck is part of the money muscle that comes out of the pork shoulder, and the scotch fillet is cut from the rib section very tender and needs searing as apposed to low and slow

If you are in Melbourne we really only get red gum firewood use that, same smoke as hickory chunks at fraction of the cost, get a good bed of charcoal down and then add small bits of wood so they burn quick you do not want the wood to smoulder, it will need you attention to keep it humming but that ...
