I'm trying this at the moment. I've left it overnight in the salt/sugar mix, and have just washed it off, dried it and covered in some bundy rum. It's now in the fridge on a rack. Bit dry bit great mixed with some brown sugar and bourbon BBQ sauce. Next time I'll put it on later, so that I can be awake before its ready. I might try to brine it also.

Set up the snake yesterday. Was going to wait til 9 or so but got excited and started it at 3pm. Vents half open it started fine. Regardless of how I set it up, the temp just climbs through the roof and the "overcooked" alarm comes up mate. I've buried the probes right down into the meat, with no change. I'm not sure how it can read so high when both probes are buried to the hilt in the meat. Quite frustrating.

I've read the instructions and think I'm doing everything correctly but it alarms instantly. Even both probes in the meat it confuses the internal temp of the weber with the meat temp and alarms as it shoots past 160f. Quite annoying haha

Cheers mate, I do get a bit of breeze where the weber sits. Will try 2 top 1 bottom and vents half shut next time. Which will be soon haha. Despite my best efforts to dry it out and ruin it, it turned out pretty good, and it fed 9 kids and 5 adults pretty well, considering 1/3 of it went to the dogs...
