More than happy with my Jim Bowie and the service from Chris @ urbangiller. I have not had a bad meal come off mine yet and have run probably a dozen bags of pellets through it so far. Cooked everything from brined chickens to pork shoulders to legs of lamb to beef jerkey to beer can burgers to bake...

Brined them, smoked them, then froze them for almost a week. They weren't as juicy as a freshly cooked one but were pretty damn good just the same and got rave reviews so all good

Actually thought about getting someone else to cook them for me, about 2 hours after I put 4 birds in brine goddammit... What's my end product likely to be like? Smoked cardboard?

Same. But work schedule won't allow it I'm afraid. Looks like I'll just have to survive with what comes out on the defrost cycle. Shame because I know how damn nice they are freshly cooked.

How to keep cooked chook?
I'm getting a few (6) chooks ready for Christmas dinner, but I need to cook them a week ahead of time. What's the best way to keep them in good condition until Christmas dinner? A bit worried that freezing will dry them out. 4 of the chooks will be brined and a couple marinated.

Yeah it is a pretty simple thing really, but don't want to have put up with dumb&$se engineers trying to build it for me. Was hoping someone in Oz had started building them already. Will pay the extra to get one freighted over from the states if there's not a local alternative.

Just wondering if there's anyone in Australia making a downdraft style product for the Green Mountain Grills? I've got a Jim Bowie and know postage from the states will kill the price.

Thanks guys, I like the magnet idea, a few good magnets will work a treat I think. Yeah chips, but you can source chips from many different places. Some units require their own specific brand of pellet be used, forces you back to keep buying their products, that's what I don't like so much and is the reason the Bradley electric smoker has been crossed off the list.
