No expert here but I do two things. Firstly I scored the top and underside to make sure the rub gets into the meat. Secondly I place the rib meat side down for the first three hours so the juices run into the drier meat layer. 6-7 hours at 120C and they are yummy!!!!! The top layer is still coarser ...

Post final update. Korean style beef ribs were scored both sides and rubbed BBQ pit boys SPG and placed in Kamado at 120C for Seven hours. I have a Fowlers vacola 4000 dehydrator it's now at least 14 years old and has never missed a beat. The same model is still sold now with no upgrades made due to there non required .it will take up to twelve trays highly recommend it Thanks for that. Just as some more background. The wife is after an Excaliber dehydrator worth over $500. So my thoughts were I could get another smoker for that So if I can just convince her a Hark can dehydrate - and it will be me doing the the dehydrating anyway, not her!

Good advice. I was going to use concrete block because there are less blocks than bricks and I am the worlds worst brickie. The commons and fire brick sounds like a good idea - I'll just need to call in a couple of favours down the pub with a mate that's a brickie/tiler.

Looks good and i suppose it depends on what you want. While it's great for cooking and looks the part, I'm not sure how much heat you'd get sitting around that on a chilly evening unless it was roaring.
