Steaksy, Looks fantastic, I'm yet to try duck breast in the sous vide. Was 3 min enough to get the fat out of the skin? Did it render much at 57 degrees? I've got exactly that set up mate and love it love the roti kit use it all the time and the extra stacker they don't do in an elite just the standard but it does have the stainless 20" grill rack (I usually position it as the 3rd stacker so it sits above the waterpan that way I've got the probe grom...

Did a decent cook for my birthday Saturday, 7kg black onyx brisket a pork collar butt a few racks of beef shorties a few St Louie cut pork ribs 2kg chicken wings and a few kg of mixed snags. Steaksy, Let me know how they go. I tried cold smoking some then Sous Vide, but there was hardly any smoke in them. Eggs smelled smokey after the cold smoke, but had no where near the flavor of the pellet grill. Not sure if I got enough smoke in, or not sure if it leached out in the water bath. I m...

You can get the dexter russell scalloped slicer (brisket knife- same ones aaron franklin says he uses) landed from amazon for about $35 ish. I got mine with a diamond sharpener blade as well. What brand and where did you get them? They look good. The Brisket Knife is a Giesser and the Boning Knife is a Prime-Line got them both from the Super Butcher at Eagle Farm in Brisbane not overly expensive I think it was $75 for the pair, they had one of the Brisket Knives left and a few Boning Kn...
