I have been lighting the charcoal, getting up to stable 250f and then throwing on a couple chunks of hickory wood. They still look superb mate, the bark is spot on and the texture is to die for Im cooking my last packet on the Booney tomorrow, will post pics if I am sober Are you in for another ord...

3 months from packing is the theory...but I've had longer than that!....They freeze well, and are better for it when you cook them. I cooked a couple of the pre prepared butterfly Mt Barker chooks last week, Morocan flavour, I ran them @ 180c for 40 - 50 mins. Came out really well.

I think the rolled brisket should be cooked in a pot roast for maximum effect, BBQ the unrolled ones for sure.

pelletgrillaccessories.com also make a DD Hood, they actually were the 1st I believe. They now offer a version that has a flip doo that one can slide to adjust amount of smoke in chamber.
