Hi mate ... I would say with a rack & some alfoil (with holes poked in it) underneath the rack purely so you don't have to clean as much , thats how ive done it on my Weber Q ... so I imagine it would be the same as that for your Spirit. But if all else fails, try both methods. Can't have to muc...

Love my webers ...when I'm doing +200c temps in the q220 I've noticed heating issues, just seems to take as long o get to 220c then it did to get to 200c. Nice pick up Mckimms ... the red model is no longer available as far as I'm aware .. - A Weber Ash Tray/Catcher is about $22 from most Weber Specialist stores ... but you can mod something easily enough if you have the know-how. - A chimney starter is very much worth the bucks ... makes life a hell ...

So after having many a good pulled pork lately, I thought I had better give it a whirl for myself. I spoke to my local butcher & he suggested to try the pork neck (collar) ... so I got one carved up & gave it a crack. Used Myron Mixon Hog Injection recipe ... for injection surprisingly enoug...

Haven't tried it on kettle yet. Thought I heard, possibly after a beer or two, that it's not wise to use Teflon stuff on your kettle? Or is that an old wives tale?

Purchased one few weeks ago .... works great. You have to really let it heat up for good results, but the many different uses for it outweigh that ... also really easy to clean.
