Re: Does anyone have any thoughts on this BBQ store.
I can also vouch for Doug. He's well known among the bbq community here in Perth and was the first person authorised to sell Yoder smokers here in Perth I believe. It is a legit business and would highly recommend him. He runs other businesses so his bbq business is purley online but I'm sure there'...

Re: ProQ vs Hark Trip Fire
Can't speak on the bullet smokers as I've never used one but I'm a happy evil stickburner. Haven't had a problem with dry meat from the Hark, although I do cook with a water pan as well. As far as hoping the thicker metal will mean less playing with fire, the offset might not be what you are after. ...

You could always make maple crystals yourself, not too hard. And if you are looking for other uses for them after making a batch they go great when added to some pancake batter

Re: Perth Meat Suppliers
Thanks Bucs and Bob - will give the Beef Shed in Malaga a crack. If they also have proper Boston Butt then it will be worth the drive! If not, it will have to be Maddington and dropping Buc's name :D You won't find any Boston Butt there. Will have to go see the Beef Shop boys about that, or speak t...

Re: Perth Meat Suppliers
Back to Drivers yesterday and the young fella said they stopped stocking brisket some time back. No plans to get it back in a far as he knew. Will have to find another regular, easy source. The Beef Shed had a heap when I was up there the other week in Malaga. About 20 - 25 minutes from...

Re: How Do You Do Hamburger?
I normally ground up some chuck and add a bit of salt, pepper, garlic and then what ever I feel like at the time... Some times some chili flakes (actually I add chili most of the time :p ), onion powder, maybe some herbs and a splash of Worcestershire. Mix it up and have a play with what ever you ha...

Re: Pellet burners becoming more popular in Perth
I also use Jarrah in my offsets...It's easy to get! When I'm doing Chicken, I have a smaller red hot fire so there is next to no smoke when I put a new piece of wood on. Chris Aye, that would work, with maybe a bit of Banksia on the outside. Didn't mind the chicken I cooked up using only charcoal a...

Re: Pellet burners becoming more popular in Perth
Jarrah and pork is a great combo.
I started using Jarrah as it was the cheapest way to run my offset on wood and I've been pretty happy with everything it turns out. The only thing I probably wouldn't use it on would be chicken or seafood, but I haven't tried yet so can't rule it out
