I can also vouch for Doug. He's well known among the bbq community here in Perth and was the first person authorised to sell Yoder smokers here in Perth I believe. It is a legit business and would highly recommend him. He runs other businesses so his bbq business is purley online but I'm sure there'...

Can't speak on the bullet smokers as I've never used one but I'm a happy evil stickburner. Haven't had a problem with dry meat from the Hark, although I do cook with a water pan as well. As far as hoping the thicker metal will mean less playing with fire, the offset might not be what you are after. ...

You could always make maple crystals yourself, not too hard. And if you are looking for other uses for them after making a batch they go great when added to some pancake batter :wink:

I normally ground up some chuck and add a bit of salt, pepper, garlic and then what ever I feel like at the time... I also use Jarrah in my offsets...It's easy to get! When I'm doing Chicken, I have a smaller red hot fire so there is next to no smoke when I put a new piece of wood on. Jarrah and pork is a great combo.

I started using Jarrah as it was the cheapest way to run my offset on wood and I've been pretty happy with everything it turns out. The only thing I probably wouldn't use it on would be chicken or seafood, but I haven't tried yet so can't rule it out ;)
