Would you know how often the humidifier needs to run to maintain 85-90% RH?
Just put a batch if salami in and the sensor decided to read incorrect. It is staying on about 35%

So I have finally got around to making up the controller box for a curing/ageing fridge. Looking for suggestions on something simple to test it out with. Nothing too hard to start with. Any ideas? I have been lighting the charcoal, getting up to stable 250f and then throwing on a couple chunks of hickory wood. They still look superb mate, the bark is spot on and the texture is to die for Im cooking my last packet on the Booney tomorrow, will post pics if I am sober Are you in for another ord...

I couldn't bring myself to even feed them to the dogs. The smell was so bad it stunk the house out for a while.
Cooked the others up and they were fine. Have had them for dinner the last 2 nights. They are huge ribs and so moist.
Gotta sort out a weekend to try this brisket now.

Nah the seal wasn't tight on these ones. These will be getting turfed. The smell is a bit strong compared to another pack.

Opened up a pack of these ribs to prep for tomorrow and one pack has a couple of darkening/greyish spots on the meat and has a bit of an off smell. Thanks mate. With the fan in there, does that come on when the humidifier is on, run constantly or on a timer? Would a small computer fan do the job or do you need variable speeds? Trying to work it all out so I get it right the first time. I am going to order the Temp controller and Humidity contro...

How is your curing fridge going?
Have you had a chance to use it? I got a medium size fridge from work that I plan to kit out to dry salami etc in.
Would you change anything on it?

I had a go with some of the $8/kg coles ribs. They are cut into single ribs.
I cooked them along with a whole rack I got from the butchers ($11/kg) and they were a little dry compared to the whole rack, but were still good.
