Re: Safety of pesticides in wood for smoking.

Dragging up an old thread here. Has anyone changed their minds about using wood that has been sprayed? I am going to try source a steady supply of fruit wood and was wondering if it needed to be organic. I also assumed that anything sprayed on the trees would be well and truly gone by the time the w...

Re: Had my first go at salami

Hey F&F
Would you know how often the humidifier needs to run to maintain 85-90% RH?
Just put a batch if salami in and the sensor decided to read incorrect. It is staying on about 35%

Curing/ageing fridge

So I have finally got around to making up the controller box for a curing/ageing fridge. Looking for suggestions on something simple to test it out with. Nothing too hard to start with. Any ideas? Temp control with both heat and cool, humidity control and constant power for a fan. Now just need to p...

Re: Cape Grim shorties

A pic of the ribs I cooked up on the weekend.
Don't seem to get the solid smoke ring that I see on some other ribs. But still happy with the result.

Re: Cape Grim shorties

I couldn't bring myself to even feed them to the dogs. The smell was so bad it stunk the house out for a while.
Cooked the others up and they were fine. Have had them for dinner the last 2 nights. They are huge ribs and so moist.

Gotta sort out a weekend to try this brisket now.

Re: Cape Grim shorties

Nah the seal wasn't tight on these ones. These will be getting turfed. The smell is a bit strong compared to another pack.
Still ok for dog meat you think?

Re: Cape Grim shorties

Opened up a pack of these ribs to prep for tomorrow and one pack has a couple of darkening/greyish spots on the meat and has a bit of an off smell. Am I best to just throw them out or trim off and cook? I don't mind having to throw them if they are no good. http://i1201.photobucket.com/albums/bb351/...

Re: Had my first go at salami

Thanks mate. With the fan in there, does that come on when the humidifier is on, run constantly or on a timer? Would a small computer fan do the job or do you need variable speeds? Trying to work it all out so I get it right the first time. I am going to order the Temp controller and Humidity contro...

Re: Had my first go at salami

Hey F&F,
How is your curing fridge going?
Have you had a chance to use it? I got a medium size fridge from work that I plan to kit out to dry salami etc in.
Would you change anything on it?

Cheers
Rob

Re: Beef Ribs 23/09/2015

I had a go with some of the $8/kg coles ribs. They are cut into single ribs.
I cooked them along with a whole rack I got from the butchers ($11/kg) and they were a little dry compared to the whole rack, but were still good.

Re: Cape Grim shorties

Plenty people interested in the ribs from here hey? Must be decent meat. Can't wait to give them a go.
Might actually cook for a few mates instead of just telling them how good the food was. Haha
