for beef I go along the lines of KISS (Keep It Simple Stupid). About 6-7 hours at around 225f before I even think about checking. Then I just go by feel. If they are done, they are done. is it a coincidence my tax refund is near enough the same price as a DC???

Although I have a pork shoulder in the weber, about 15 hours in and it makes me think I might miss the fiddling?

Thanks guys.

Due to space limitation we don't really hold big get together so so it's usually for a max of 6 people. The kamado and ots handle the volume fine, just after something for me and the mrs that I don't have be constantly close to home for.

certainly not going to call someone for a price, it's a smoker not a gym.

The DC is definitely the front runner at the moment for me

Best ribs in our sort of area I have come across is at Kogarah mate. Cant recall the name but they are opposite the train station. Butcher in Mortdale also does a decent rack but doesn't always have them so worth a call first. I did see a post a few weeks back on another group of a decent set of rib...
