Its actually not too bad, I am conscious of the smoke and usually only cook when there is a slight breeze to take the smoke away. You could use a fire brick, a quick google search came up with a 300x300x50 refractory floor tile rated to 1500 degrees for $15.

Looks really good.
I use the Captain's brine recipe too and find it makes a huge difference to the end result.
Usually I cook mine in the dragon with a vertical hanger and just a small chunck of cherry wood for added flavour.
Like you Davo, I struggle to get pics as I want to tuck in as soon a I can.

In my opinion it looks dodgy. The fact there is no direct contact information and only an email address sends a red flag up straight away.
