I'm happy with whatever hardwood you can make them out of that would be general purpose use and in 10-15kg bags. If you want to make special flavours then I reckon 2kg-5kg bags would be the way to go as you could use them on a per cook basis, then revert back to your normal preferred pellet, or mix ...

How can this be done to a non-WiFi model? Or should I just buy the WiFi upgrade from U/G? Yep I just sit them on top. You could do the whole wing on them, but if you cut the wings down you'll have issues with bits falling into the grooves I reckon.

Weber Q control setting

From memory you leave both burners on for first 20 mins. The roast setting is about 1 quarter of the way between low and high, but play around with it as I like to do some things a bit hotter. Download the user manual to verify as its chock full of pics and info.

My local butcher, after much arm twisting, ordered in a box of 1824 brisket that he claims is as good as Cape Grim. He tells me it's all grain fed. Anyone had any experience with it?
