Holy crap this works. WSM with just the pan in place and some foil to catch anything that drips is genius. Control vents with bottom cents as described. Will not bother using water again. The pan doesn't get damaged from having high heat under it with no water? Might have to try this tonight Just be sure to double foil it. Makes for easier clean up. Mine has gone for 18hrs and still had heaps of heatbeads left, some even unlit. And watch it on the way up as it can overshoot easily. ...

Does everyone always use water in their WSM/ProQ?

I used it for the first couple of cooks then went dry pan and have never looked back. I have filled it a few times since and can notice no difference in the moisture of the meat? I just find it takes ages to get to temp and uses triple the fuel.

I found with my L&S cook on the weekend I had the bottom vent at 0.25 and the top around 0.75.

Held 120 for 4 hours

The Standard gauge will be a $10 replacement item, so that tells you something. Also also probes are not suitable for taking pit temperature, they will give you an idea, but on the Maverick ET733 or 735 you need to tell the probe what it is measuring, because the logic it uses is different. Sorry about the blurry picture but you can see a fair bit of time elapsed. Over the 5 hour cook i think the highest i saw the dome thermo was 90C.

No. But i had a probe on the grill and a probe just dropped in top air vent. Both read about the same.

I'll take the dome thermo out when i get a chance. I use thermometers all day at work and have checked the calibration of my igrill's. They are spot on.

I found my dome thermometer about 50-60C out yesterday. The dome was about 75 and my igrill about 130. For searing and pizzas it doesnt matter but low n slow get a good digi.

I have added a Dragon to my artillery.

Smashed some steaks and pizzas in it. Goes well.

I'll low n slow a pork butt or ribs in a few weeks when I have time to sit and watch it. :wink:
