I've been buying ribs from Meat Emporium for a couple of years now. I've seen proper St Louis cut cryovac spares there on sold as belly ribs on and off across that time. Alternatively nowadays as per this guide, I buy the full plates and ask for them to be cut down accordingly. Takes a little while ...

Awsome, Do an experiment and try a reverse sear on it. really low and indirect for an hour or so then flash sear. I'm Totaly converted to this method. A recient test I did with rib eyes off the same cut totally changed my ways. I'm aware of the reverse sear from my absolute fav US BBQ site, Amazing...
