I dont spose those ribs were pork loin/back ribs from costco by any chance. I noticed you said butcher but i picked up 3 monster racks from costco northlakes QLD on sat and they look almost identical. Already trimmed/ ready to go except to peel off the membrane.

Who doesnt like eating ribs every weekend lol. Keep on trying..

I tried the beef rib paper and foil comparison couple months ago, paper ones came out alittle dry. But i think that was due to the paper i used. Officeworks kraft, became soggy. What paper are you using and where from?

I take my wooden handles off once per year on my 3 and give them a good wet and dry sand before coating with decking/wood stainer. Keeps them looking new and fresh.

Re: Rib Diary

Almost there, 3,2,1 is like you said; 3hr on the grill, 2hr wrapped/foiled, 1hr back on the grill unwrapped. Go one further and durring the last 15 mins baste with your favorite sauce! Rest for 10mins and hook in!

There is a website somewhere that helps you with firebox size in relation to cooking chamber size and exhaust and flow control for offsets. I just can remember it right this moment. Maybe do a search through the forums for it.

Apart from that it looks good mate!
