Like Gumb said smaller wood better burn, remembering that you want blue-ish clear smoke when your cooking not white. If it's white your over smoking and it will make the food taste bad. I would recommend the addition of a temp probe if your cooking chicken as anything less than an internal temp of 1...

Pork Ribs are also fairly easy if you want to spend the money on them, I do tend to find however that the spare ribs from a normal butcher tend to be pre-trimmed of pretty much 80% of the fat which makes for quick,dry cook. Guys you need to remember that while this is being built to be a great functional smoker, it's also being built to a price point. you wont want to keep adding chunks or you will over smoke the meat. After around the first 2 hours you have all the smoke you need, more smoke will make the meat take on bad taste.

I have offset, cabinet, and UDS. If you make BBQ for your self and your family, UDS is best. 30 Gal barrel for 1 to 3 persons. 50 Gal for 4 to 6 persons. No need to brine if your injecting as both processes serve the same purpose, to bring moister and flavour into the meat.

So I would think you would do one or the other.

Picked up my plate yesterday and had a great chat with Andrew, such cool guy. Installed the plate today, took all of 5min fit great.
