Re: Pork Storage
Thanks guys.
I have vac sealed them and might move to the freezer tonight.
With the rind on the shoulder could I just do the score, boiling water and then salt and into the oven to make some crackling?

Pork Storage
Hi Fellas, I just bought a pork shoulder with skin on and some pork ribs from a small butcher today. Was just after some advice on how long you think they would be good in the fridge for? I will cook it at some stage between Christmas and New Year's but wasn't sure if I would be better off freezing ...

Rendered Wagu Fat
Sorry if this is in the wrong place but I saw some rendered wagu fat in Coles today next to the duck fat and was wondering if anyone had used it before?
I was thinking about using it for roast potatoes, can't be bad?

Crushed Red Pepper Flakes
Hey Guys, I had my first crack at making my own taco seasoning from a recipe I found online and one of the ingredients was crushed red pepper flakes, I used hot chilli flakes but I am thinking these aren't the same thing, she was pretty hot  Can we get crushed red pepper flakes in OZ or is th...

Re: What did you ruin?
Thanks Lads,
I did pull the husks back and pull the fibres off but only soaked for about 10mins, so will definitely soak for longer next time.
Will nuke the spuds too, keen to give them another go.

Re: What did you ruin?
Last night was not my night! I did steak, sausages, ABT's, hasselback potatoes and corn on the cob all on the weber kettle. I have never cooked ABT's, hasselback potatoes and corn on the cob before. ABT's were awesome, could have just had a whole plate of them. Steak and sausages were good, hard to ...

Re: Lamb Rack
Well the actual meat was delicious but it took some time to get to it after cutting off all of the fat! I used half a chimney of heat beads and took it off at about 52c I think, and then put it fat side down over the beads for a few minutes, maybe it needed some more time over the direct heat. Let i...
Re: Lamb Rack
Cheers mate, was think I might just do it on the old weber, could do it in the gas smoker if that would be better?
Maybe about 2/3 of a chimney in the weber indirect?

Re: Lamb Rack
Thanks Gumb, will let you know how it goes.
It is just an Aldi one, saw it for $20 a kilo so thought I would give it a shot.
We love lamb cutlets but have never done a rack before.
