recommendations small offset

right now i run a WSM 18.5 and a homemade mini WSM, the capacities work really well for me but i've become interested in working with an actual fire rather than the charcoal / wood chunk setup in the bullets. i've been eyeing some of the nice locally crafted offsets but they all look massive, 80% of...

Re: How much do you open your vents for low n slow?

I've always run the dampers about 1:1 on the kettle, I find it's good for cooks at 130c and up using regular heat beads. To go a little lower the green heat beads burn a bit cooler, or I've helped mates set theirs up with some of the special setups to maintain an even slower burn, it starts to come ...

Thermoworks smoke

Had been using an ET 72 for years as my daily driver, good unit but was starting to play up a bit mostly just struggling to find a connection, getting old I guess. When I saw thermoworks was having a crack at a dual probe RF unit I had to jump on it seeing how good the thermapen has been. This thing...

Re: Versatility of smaller units?

Ah decisions decisions... Well at this stage seems it may be worth just taking the punt on a less expensive unit like the traeger pro 22 and seeing how I like it, if it doesn't work out I there's another home for it and can swap back out with the Q, and at the very least I'll know whether or not the...

Versatility of smaller units?

I've discovered I can fit something like the LG 700 / trager 22 sort of size thing, but it would need to replace the Q320. Right now I use that for small roasts - pork loin, eye fillet, full chook are the standards as well as classic grilling of snags, chicken wings or burgers. I like the weber beca...

Re: Electric smoker - am I making a mistake?

Man aside from the brisket I'd be recommending the 37cm WSM, I use a DIY version every week or two which is slightly slimmer and can still get 4 - 6 racks of ribs in there. It's pretty set and forget although I usually sit next to it anyway as they only take around 5 hours give or take, over this ti...

Re: Replacing the Q300?

Yep with a decent amount of preheat the grill got up over 300c and was able to get a solid sear, did a couple pizzas too which turned out very nicely, will see how it goes with crackling tomorrow arvo. I did notice I am getting a reasonable amount of yellow flame, I cleaned the burners but the holes...

Re: Bradley question: Multi-use smoker?

I looked into this a while back, for biltong isn't it just a box with a computer fan at room temp? If you need to heat it check out reptile supplies for ceramic heat lamps and thermostats, they should get you 40c no drama.

A well done eye fillet?

I have to make one for some people at xmas lunch, I don't really care and if that's how they want it I'll do it that way but I have no idea what the best method would be, the goal is really to cook out any pinkness so I'll probably need to take the IT up fairly high. Was thinking maybe fairly low n ...

Re: Anyone using bbqguru and WSM?

Re: Anyone using bbqguru and WSM?

Yeah I'm with you guys on keeping it simple, the WSM and minis hold a really steady temp and rarely seem to need much more than a few minor adjustments, too easy when you're sitting around it with a few beers which is something I love to do, on the other hand don't necessarily want to be chained to ...

Re: Anyone using bbqguru and WSM?

I ended up installing just above grate height, below seemed it might be more efficient but no good having it blowing ash everywhere, still experimenting with where to aim the vent but seems to be doing the job so far on a reasonably chilly night

Alright cool I'll give it a good clean up and see what it will do, 275 is OK, I do go a touch higher on the griddle but it'll work
