What Did You Cook Part 11 - January 1 2015
Had a crack at two racks of short ribs using the 3-2-1 a week ago... Cuts were a little different. Loved the beef flavour there but should have done a longer cook (snake) to get it nice and tender ! Looking forward to next time already! http://images.tapatalk-cdn.com/15/07/06/1f5b34fb671af98e76d3f1e...

Thanks for the info Chris. This was the first cook christening the spit, and had it up fairly high to begin with which meant it was slow going. Got hungry so lowered the chicken and added some more fuel! Will definitely take your advice on future cooks (and try and get some decent lump!) Sent from m...

Charcoal suppliers in Melbourne (northern suburbs)
Just wanted to know if anyone knew some good suppliers of lump in the northern or western suburbs of Melbourne?
Called up a supplier in Highpoint and was quoted $49 for a 20kg bag of gidgee, which seems a lot higher than normal.

[quote="gnol"]I have an access to an abundance of home grown tomatoes so I made a few jars of "mild" chilli sauce that kicks like a mule. Looking forward to trying this one on a few cooks.

Importing a weber kettle
Had luck getting an OTG from Amazon a few months back. Package came through and they had dropped it, crushing a handle. They were going to do a swap, but to send the old one back would cost around 500 (Amazon has ridiculously cheap shipping), so they sent me another! There were no charcoal baskets, ...

Anyone used this brand of charcoal?
Got a couple of bags of these from woolies. They heat up quickly, but don't last as long as heatbeads. Good for a nice sear / indirect.
Would buy a few at $3 a pop!

Lamb ribs on the weber
Cheers Gindemon! These aren't the most substantial racks, but have hit a couple with a zaatar type mix and some others with basic salt, pepper and oregano. Thinking of getting them on soon for a couple of hours uncovered and then will wrap until tender, and hopefully that fat will render nicely out....

Lamb ribs on the weber
Hi guys, Have a couple racks of lamb ribs. Thinking of trimming them up, rubbing and cooking via a snake for around 4-5 hours. Any suggestions on some foolproof methods? I've read a heap of topics covering the 3-2-1 and crutching methods, but are they required for lamb ribs? They seem quite fatty, h...
