Had a crack at two racks of short ribs using the 3-2-1 a week ago... Cuts were a little different. Loved the beef flavour there but should have done a longer cook (snake) to get it nice and tender ! Thanks for the info Chris. This was the first cook christening the spit, and had it up fairly high to begin with which meant it was slow going. Just wanted to know if anyone knew some good suppliers of lump in the northern or western suburbs of Melbourne?

Called up a supplier in Highpoint and was quoted $49 for a 20kg bag of gidgee, which seems a lot higher than normal.

Had luck getting an OTG from Amazon a few months back. Package came through and they had dropped it, crushing a handle. Got a couple of bags of these from woolies. They heat up quickly, but don't last as long as heatbeads. Good for a nice sear / indirect.

Would buy a few at $3 a pop!

Cheers Gindemon! These aren't the most substantial racks, but have hit a couple with a zaatar type mix and some others with basic salt, pepper and oregano. Thinking of getting them on soon for a couple of hours uncovered and then will wrap until tender, and hopefully that fat will render nicely out....
