Most of it is the produce and process. The holy trinity of Salt , Lemon and garlic infused meat can taste both exotic or bland depending on the produce and process. Thanks All for the recommendations, I prepared a leg of lamb with a spice rub yesterday.
Cooked it for about 4 hours and it turned out awesome.

I would like to make the chicken wings, what way can I get the skins to crisp up?
I have tried the wings before but the fat seems to stick to the grill.

Thanks all for the guidance, bananas - didn't know they were that bad. I ate one yesterday need to stop it now.

As for the Salmon Fillet recipe, thanks it looks very interesting. One question though - where can I find an oak plank.
