Thanks for the tips and pics. Why would the packet suggest heating the beads for 30 minutes before using them to cook? I assumed (I may have read something about it?) that it needs time to burn off chemicals before exposing the briquettes to food. Or is it just to get them hot enough? Good luck with...

I use Heat Beads Briquettes,and they suggest burning the briquettes for about 30 minutes before placing them in the smoker (once they are covered in a light ash). So your suggested method would not be appropriate. Are there other briquettes that would be appropriate for the method you are suggesting?

Best cut of meat to smoke - Adelaide

Any suggestions of what are the best cuts of meat to smoke - often read about brisket, but that is not readily available in Adelaide. And perhaps where to get it from?

I have also sourced some branches from an unwanted lemon tree. I haven't been able to find much information on using lemon wood for smoking. Anyone used it, or know if it is suitable?

Well I just realised my sister has a few fruit trees in her yard! So I paid her a visit, and as it turns out she had a nice thick piece of a branch (15cm diameter, 60cm long) which had been cut from a old apple or peach tree about a year or two ago. Score!
