In the next month - 6 weeks we will be getting one of the MIL beasts killed by the local farm butcher and i would like to do a brisket

So I was thinking about the moisture problem If I were to put ice in the cabinet itself but had it inside a tub with a lid that would solve the moisture problem would it not? I would think the only moisture able to come in contact with the food then would be what is already in the air in which case ...

Santo I was thinking the same.
I figured if the idea is to get low temps wouldn't the "bad seal" around the door help unless it leaks too much heat.
I reckon it would be easier to try and get temps higher then it would be to try and lower them.
