does anyone know the formula or a calc to convert the amount of cure required in a recipe depending on nitrite percentage? most recipes i see either use cure #1 (6.25%) or Kwikcureit (11%) and the cure i have is 12% (i dont remember the brand off the top of my head) so im after a way to adjust for t...

Hi all

In the next month - 6 weeks we will be getting one of the MIL beasts killed by the local farm butcher and i would like to do a brisket
is there anything in particular i need to ask him to do to it or do i just tell him what im planning and let him do his job

So I was thinking about the moisture problem If I were to put ice in the cabinet itself but had it inside a tub with a lid that would solve the moisture problem would it not? I would think the only moisture able to come in contact with the food then would be what is already in the air in which case ...

Hi all

Just wondering if anyone happens to know what type of chilli it is that woolies sells as red chillies.
They are the longish red one that they always seem to have.

Santo I was thinking the same.

I figured if the idea is to get low temps wouldn't the "bad seal" around the door help unless it leaks too much heat.

I reckon it would be easier to try and get temps higher then it would be to try and lower them.
