I'll have to give it a try next time I am in Sydney.
Thing is, once you learn how to cook this stuff, it is hard to find a restaurant that meets your satisfaction. Even when I go back to the US, I am frequently disappointed even at well established places.

Weber turkey recipe
I was in Sydney for Easter weekend and made it in to Costco. Went mainly to get spare ribs which were not as impressive as I had hoped. But, they had whole turkeys at $6.99 a kilo with a thirty dollar instant rebate making them a steal. I got an 8 kg bird for $27! I cooked the turkey tonight on the ...

Re: Another new Yank - this time in Melbourne
Yep, KC Masterpiece is definitely my favorite US nationwide store brand. In Oklahoma, Head Country is very popular. Completely different taste. A guy I work with in Port Mac was in Newcastle and saw bottle of Head Country BBQ sauce in a store. He happened to look at the label and bought it for me wh...

The thing is quite heavy and if I ever had to move it would be difficult. I used the aluminum flashing which works fine. After I did mi...

Re: Yank in PM
Thanks for the replies, guys. LA1, thanks for the advice on charcoal/wood. The first time I went to BBQ Galore here they happened to be out of hickory. The person working that day was less than knowledgable. Since, I have been back and can get hickory chunks (and better service). I love pecan but th...

Yank in PM
Hello Aussie BBQ folks, I am an American living in beautiful Port Macquarie. I have been here for three years but I must say that barbecuing had been put on the back burner for me. Was never a competition guy in the States, just Q for friends and family on a WSM and a kettle. Moved here and got a ke...
