Re: Pulled pork Daniel Boone
Update: I just opened up the shoulder to have a look at it properly and give it a dry rub. It is a MONSTER!!! Closer to 6kg really. It is nigh on impossible to handle a bone out shoulder this size without any trussing. So that answers that question right there! I tied it up all tight, gave it a litt...

Re: Pulled pork Daniel Boone
Thanks for the replies :) I have been doing some more reading and it seems that 12-14 hours for a decent sized shoulder without wrapping is to be expected (cooking at 225F). I will set a profile as a fail-safe... I'll set it to get to 203F and then switch out to "Keep Warm". That way if it...

Pulled pork Daniel Boone
Hey guys, I've got a big crowd coming on Sunday night but I have to work all day. I'm planning a pulled pork in my GMG Daniel Boone, which is still pretty new to me. I have done a pulled pork 5-6 hours at 225F but it wasn't really long enough. I'm thinking of putting the pork on at 3am, I'll be home...

Re: Where to buy pellet fuel in Australia
Thanks Gumb, that's reassuring. I suppose the other issue is that the salesman said there was a eucalyptus hardwood and a pine softwood. I know that you shouldn't cook over any softwood as it could be toxic and the fact that the bag has no labelling at all means I just have to trust the guy in the w...

Re: Where to buy pellet fuel in Australia
Hello! I'm in Tasmania and I recently bought a GMG Daniel Boone. I will be in touch with Klimt from Spotty Dog to sort out some pellets but I was driving past Pellet Fires Tasmania http://www.pftas.com.au/ I called in and asked if they had any food grade BBQ pellets. They said that they had a basic ...

Re: Dry Curing Bacon
Here we are boys and girls: http://i42.tinypic.com/rtqf4p.jpg Cold smoked over apple and cherry pellets for 3.5 hours and then hot smoked for another until it reached 60C. The internal temp of the final product is low but will be pan fried before serving. The cure added some sweetness and complexity...

Re: Dry Curing Bacon
Great info Mick, thanks heaps! I will smoke it tomorrow afternoon and take it to work (I own a cafe) to slice on the professional slicer on Tuesday. I will get just 1-2 days rest before serving hopefully that's enough to mellow and settle the flavours together. Thanks for all the help and reassuranc...

Re: Dry Curing Bacon
Thanks mate, that is reassuring. I will give on day 6 and just cross my fingers! If it doesn't taste (or smell) great, I will buy some from the shop and be more patient next time.
Cheers

Re: Dry Curing Bacon
Thanks for the replies. I have read that thread before Gnol and I did use an online calculator to help work out how much Kwikurit to use for the weight of belly I'm using. I appreciate your feedback too Ciapek, as it sounds like a dry cure is feasible in 5 days. My pork is feeling quite a bit firmer...

Dry Curing Bacon
Hi all, I'm currently dry curing my first bacon, using a maple bourbon cure recipe that I found online: http://saltandsmokefood.com/homemade-bacon/ The recipe calls for Pink Salt but I used Kwikurit which is nearly twice as strong. I started the cure last Tuesday morning. My original plan was to cur...
