Ask them to put a collar butt through the pickle. Thats what I get from the same place. Gives a great result when pulled.

The marinated loins are bloody great from there too. Just cut off as steaks and grill!

There are all sorts of bacteria and yeasts in the packet that mostly do beneficial things to age the meat, but if temperature and seal integrity get compromised then all sorts of shite happens and shelflife goes down rapidly. For perfect crackle, get the rind as dry as you can, even leave exposed in the fridge for a couple of days.

Also pour some boiling water over the rind and pat dry,

Then do the normal stuff, oil, salt, high temp to start.

If you are using vacuum packed pork belly, just pour some boiling water over the skin and it will crackle. Old chinese trick!
