Save a rabbit eat a pig!
Over Easter, I smoked some ribs and beans on my offset. Best ribs I have cooked so far and same with the beans. Good to know I am progressing.

BBQ Restaurants In Australia.
I would consider Hogs Breath and Outback Jacks as the closest to a chain down here. I'll be honest, hogs breath is some of the worst BBQ that I have ever had and my fiancée and I walked out after a few bites and have no intention if ever going back. Outback jacks is much better. In KC, we have a few...

ProQ vs Hark Tri Fire
Hi guys. On the hunt for a new smoker for next season and I am looking for experiences with these two or similar. Both I can find on the Internet for about the same price. I believe you can direct grill over the ProQ which is an advantage. Can you cook over the fire on an offset like the Tri Fire? I...

Smoked whole chicken advice
I smoked/grilled a chicken tonight. It was one from Aldi. I split it and the. Smoked it for 1 hour and then grilled it until I hit 165/170 on my thermometer. Pulled it off and my partner wasn't convicted it was cooked and made me put it in the oven. Frankly, I didn't want to spend the night on the t...

I know, they are horrible. I have an analog in the smoker and I have a digital wireless one there as well. They are both cheep-o ones but they do work. The biggest problem I have with the gasmate is heat retention in it. I have made my fire ring which helped heeps and I have changes my fuel to lump ...

Sweet Baby Ray's for basting?
I just used it on my chicken. Worked just fine. If y'all think SBR's is sweet you should try some of my sweet sauces. I have a sweet tooth though, but my partner doesn't. If it is too sweet, I normally mix something smokier or spicier with them. Diluting it with beer would make it less sweet.

I like pictures too! Here are two. Probably going to be smoking some stuff today since I got off work already. I am here or the long haul as smoking is something that should be constantly changing and learning new things and trying them out. I am lucky to have an Aussie who loves BBQ as much as I do...

I know don't judge me by my smoker. The way I see it, everything that I am learning from having a bad smoker will put me miles ahead when I get a decent one. I just have to practice and that means more bbq to eat! I am alright with that!
