that pork took 20 hours at 230f...

Where do you live? If in Sydney east go to BBQ Aroma at Leichhardt. If in the west go to Emberpak at Mt Druitt. Both offer 20kg bags for $20-25. BBQ Aroma has a few varieties and some great wood chunks for smoking. His peach and apple are great. Emberpak has the lump charcoal and i always pick up a ...

normally hit my meat with as much smoke as I can at the start of the cook. I dont bother putting chunks near the outer edge of the kamado.
Someone once told me that once the meat forms a bark not as much smoke will penetrate. Not sure how true this statement is.

McCormick have dropped two new BBQ sauces to there range at Coles.
Picked up both on the weekend and was pleasantly surprised. Very nice flavours.

Recently moved to Bulli and have been looking around the local area.
Where can i get my hands on all good BBQ related gear locally?? Im talking meat (shoudlers and brisket), rubs and sauces, lump and fruit woods
Seems to be a lack of retailers down this way....
