Went to San Antone today for lunch. Sensational, I think I've found a new favorite restaurant. The chicken on the share platters was incredible, so smoky and crispy, gotta find out how to cook them like that.

Just throw in a lamb or pork shoulder. They're really forgiving on temp so don't worry if the fire goes out or spends some time at 180c.

Butterflied legs don't take too long as they're generally pretty thin. Can't help on time, you should invest in a temp probe and cook it to temp. If it's ready early just foil it and rest it.

Time at temp is better, that's why you wrap it, cover it with towels and put it in an esky for a few hours.

Plenty of people foil then after the stall, I like to be a bit more basic and don't foil it until it comes off when it reaches temp. When it hits 93c or so I'll take it off.

I've injected my butts plenty of times and paid no attention to getting it to temp quickly and have had great results every time.
I usually use apple juice, cider, whatever is in the fridge. It does give it extra flavour.

One type have an accelerant - don't use the easy light ones. The other ones are fine for the snake method. this thread is really old but i want to chime in heat beads are pregnated with an accelerant to burn....its why u are supposed to leave them a while before cooking on them. I would not recommen...

I just use a small pile of charcoal on the start of the snake. Get that going, adjust the vents, throw on the food then leave it.

I use fatty beef mince and squeeze out some pork snags, 50/50. Add a splash of sauce and cook them direct over hot charcoal. Then bun them, add some garlic mayo, crispy bacon and cheese, maybe green stuff too.

Lump works for a snake but is harder to get a consistent heat output and doesn't last as long. I've done both and prefer the heatbeads for long cooks as it's less hassle.
