Re: New Stainless steel Pizza Oven

G'day Anthony, I used to own one of these ovens, but I didn't get as much use out of it as I should have. I never did anything apart from pizza in mine, and yes, they get extremely hot on the outside as there is minimal to no insulation between the two steel layers. I was cooking with mine one nigh...

At nearly 3 grand for an electric UDS I don't know that many will have them.

I certainly can't afford it.

Re: New to BBQ smoking

Start simple with something inexpensive and forgiving like chicken drumsticks. Don't get too carried away with the amount of smoke you introduce, eating a bushfire can be the end result of over smoking and then your family will whinge (personal experience). This recipe is both tasty and forgiving. h...

Re: New to BBQ smoking

That is one of the most versatile BBQ /Smokers around. I can't say enough good things about mine. Great price too. You will be able to do just about anything with that. Low and Slow pulled pork, Roasts etc and if you get a cold smoke generator from Bunnings you can do your own cold smoked salmon, ch...

Re: Which bbq master would you like to be taught by?

Myron Mixon or Steve Raichlen if I had to pick a traditional guru. Heston would have some great ideas and be inspirational. Ramsey would be fun to swear with. But.......... Google would be my final choice because there's no limits, boundaries or preferences when you search hard. Every food style in ...

Re: Jumbuck 5 in 1 Drum

Arnaud, For that sort of money, I'd give it a go especially if you're using gift vouchers for the bulk of the payment. I've got one of the jumbuck 3 in 1 kettles ( Pizza oven, rotisserie and kettle) and it works a treat. Don't expect it to perform like a $2000 BBQ and you won't be disappointed but i...

Re: AussieNick's journey to BBQ Smoker mastery

Lump charcoal can be a bit hit and miss particularly if it's the imported stuff. I'd recommend practicing with heat beads for a few cooks to get used to driving the Pro Q. Vent management takes a bit of getting used to, where the smoker sits (sun or shade), ambient temp, breeze all play a part. It t...

Re: Question for those who use Pellet cookers

Have a look on eBay for a 12 to 240 volt inverter with enough wattage to run the pooper. They start at about $50 and go from there.

Can plug them into the jump starter or cigarette lighter socket. Great for camping too.

Re: Fornetto cold smoke generator

Nice looking smoked cheese there, avoid the temptation to try it early, it'll get better the longer you leave it. I've given up on Salmon for the year, daytime temps are too variable. Practice and wait. In the meantime, try cold smoking almonds and cashews if you like nuts, coarse sea salt smokes we...

Re: Fornetto cold smoke generator

I don't thumb pack mine but fill it by spooning the dust in and then leveling off with a ruler or straight edge. I have found with mine that if its too tight it will struggle to keep burning. Mine nearly ended up in the bush next door after a few failed lighting attempts but then it just twigged and...

Re: Fornetto cold smoke generator

I think that stuff may be a bit too coarse to continue to smoke. I've tried some like it and had the same problems. One of the biggest issues with Cold smoking is that the ambient air temp for doing fish must be low to avoid spoiling the fish and the colder it gets the more heat the dust needs to ha...
