Re: What starter cubes do you use?

I just use the redhead lighter cubes....granted they have an accelerant but by the time the briquettes are properly ashed over and ready to use, there's absolutely no scent of the cubes at all and no they don't get on the briquettes....been using them for many years now and never had tainted food.....

Matador Radiant Pro Kettle BBQ

Hey legends, Just stumbled across this while meandering round the net and looking at random stuff, feeding my BBQ addiction. https://www.matadorbbqs.com.au/barbecues/kettle/0038453-radiant-pro-kettle-bbq Now, I'll preface this by saying I have no affiliation with anyone. I'm a hack backyard Q'er. I'...

Re: How Do You Do Hamburger?

I've been mucking around lately trying to find my ideal burger recipe. Firstly I just use ground meat, no other spices except salt, and I grind it myself about an hour before I cook them. I've been trying different mixtures of chuck, brisket and have even been throwing in some pork belly strips to e...

Re: Has this ever happenned to you?

I get mould all the time in my smoker Davo, nearly always from not cleaning it after a cook. I just wash it out and give it another run. Never been crook or had any off flavours or anything. If it's on my grates I usually hit them with the pressure washer and they come up sparkling. I then make sure...

Re: Roast leg of lamb in weber question

Hey mate, apologies for the delayed reply. I'll assume the lamb has been done and dusted by now and probably enjoyed. To answer your queries, depending on the size of the leg of lamb I run roughly 27-28 beads each side for a good heat early. Chars it up nicely. I've never used water in the pan in th...

Re: Opinions on Rotisserie Setup

Mate I bought a Weber rotisserie kit about 6 months ago after a good few years of umming and ahhing about it. Like alot of others sentiments on here the only thing I'm dirty about is that I didn't get one sooner. It throws out some of the best food you'll ever eat, honestly, and it's set and forget....

Re: Charcoal briquettes

Heatbeads and/or charcoal (lump or robot turds) are both fine in a WSM. I use both in mine. Due to the unpredictable nature of lump because of inconsistent size and density of the pieces I cover the charcoal grate with one single layer of heatbeads and then fill the rest with charcoal. I put an old ...

Re: Pellet Smokers & Primo Kamados

Taking a keen interest in this thread. I have a WSM and am super happy with it, love it in fact, and hence have no desire for a Kamodo type Q unless it was gifted or found etc but am really starting to get a real desire for a set and forget, no fuss pellet pooper style Q. Still a bit green with them...

Re: Bradley Maple Flavour Cure

Have a look at the directions in the link in my original post boys. Old mate adds maple syrup after about three days curing, massages it for the duration of the cure and then coats it again pre cooking. Having never done it before I have no idea if this is an effective method or not. Maybe even a ma...

Thanks Chris.

Meant to add in my initial post that this is the dry cure method if that makes any difference?

Bradley Maple Flavour Cure

Hey guys, Looking for pointers from anyone who does/has used this stuff to make bacon or other stuff. http://ecx.images-amazon.com/images/I/5151N66QCML.jpg I'd love to have a crack at making my own bacon with it but I'm not 100% sure on how long to brine for etc. I looked on the Bradley website and ...

Re: I have to do this!

That is so wrong.........but so right ! If I could get cylindrical shaped donuts then wrapping them would be easier. If wrapped right the unsuspecting consumer wouldn't be able to see what's inside. I reckon this would go good wrapped around churros. Very donut like, cylindrical, roll them in cinna...

Re: Anzac Day 2015

Spent 6 years in the RAN myself. 6 of the best years of my life. Should have bloody stayed in to be honest, however, joining at the age of 17, I was too young and smart. I was going to take over the world!

Re: Pig on the spit

Mate I reckon if there's one day I'd be getting a catering mob to do a spit it would be on my wedding day. Tell them how many people, tell em you want plenty per head and the only thing you need to worry about is how full you'll be at the end. The laat thing you want to be doing on that day is runni...
