Why would you powercoat the racks? Apart from it obviously burning off, I would be worried about the chemicals imparted to your cook in doing so.

Unless this is a cold smoker, I would be very worried about the barrel catching fire.

That looks very very dry. What temp did you cook it at, and at what internal temp did you cease cooking? 6 hours isn't really low and slow, nor is it fast and hot. On the smoke, I prefer not to add much to pork. Maybe one chunk the size of a matchbox, but definitely no more than that or the flavour ...
