Re: DIY Rub

Anyone tried this yet??? I had all the individual ingredients so I made this rub from scratch. Substitutions were fresh lemon zest, 1 tsp oregano and I used brown sugar. I also used my own finely chopped dehydrated chilli flakes, only 1 teaspoon as they are super hot but good god are they tasty :) ...

Re: New Gas BBQ advice needed

I know they aren't cheap, but a Weber Q would do everything you require and more. Over the years my family has had all kinds of gas BBQs from cheap flat tops to very expensive stainless steel BBQs (with kitchen sink) and not a single one has lasted longer than 5 years of reasonably frequent use. Sin...

Re: Santa is bringing me a ProQ smoker

Next time I'll dial back the chilli. 5am wake up was not pleasant. https://media.giphy.com/media/4m0r9Ko3c7HtC/giphy.gif I think next time I might try them natural and give them an extra hour to get the internal temp to 200°f. I also need a better cornbread recipe, the one Lauren baked was a bit tas...

Re: Santa is bringing me a ProQ smoker

First feast is complete. Beef short ribs!! http://members.iinet.net.au/~sshirren/BBQ/ribs.jpg They were tasty, tender and about 1 rib too much for a single meal. Posting the recipe and process for reference (mine included :D ) The ribs were seasoned with pink salt, pepper and a bit of garlic. Bastin...

Re: JERKY JERKY JERKY

I had a go at making some beef and kangaroo jerky in the dehydrator. The beef was a 'heart smart' silverside and the roo was a fillet. As this was a test I cut half across the grain and the rest with the grain. Started off with thin slices but as the meat defrosted they got thicker :) Trimmed as muc...

Santa is bringing me a ProQ smoker

I must have been good this year as I'm getting a smoker to go with the gas bbq and spit roaster. I considered the WSM but the latest ProQ looks like it is better value. I'm going to kick things off with some ribs, then I'd love to give some cold smoked cheese a crack. I've got a half octopus in the ...

Re: Pork on the spit..

Just finished eating. I think the cook time of 6.5 hours was a bit long, I might try more coals over a bigger area next time. Heat was good, but I think I need it everywhere rather than just where the meat is. Had a second go at oven baking some balsamic beetroots tonight as well, they are very tast...

Re: Pork on the spit..

fuel pushed toward the back...stops any big flare ups Good point Dave, I haven't had any issues with big flare ups with the legs of meat I'm using, but I'll keep it in mind when I graduate to whole beasts. My mini spit was a flare monster and I had to keep the coals away from the fat, which was nea...

Re: I'm Done!!

Well, I usually lurk and steal recipes on here :p I didn't notice any dramas at all, so I'm either oblivious to what is in front of me (my wife votes this option) or you did a good job of keeping everything sweet :D I'm a big supporter of taking a step back from things and chilling out. I'm big into...

Re: Pork on the spit..

I'm cooking a rolled pork leg on my spit at the moment. It is a bit of an experiment as it is a new spit and I'm trying different flavours and different meats. First go was with a rolled leg of lamb with a herb and lemon marinade that was WAAAAY to lemony. This pork leg I've gone with thyme, oregano...

Re: Masters Charcoal Brand

I bought a bag yesterday so I could cook a leg of lamb on the spit. Lights pretty easy and was ready to cook in a jiffy (although using the leaf blower to stoke it up helps ;) ). As Nath said, it is light wood so it doesn't burn as long as a good lump of hardwood charcoal, but for my mini spit it wa...

Re: New knives

I've been asked to do a follow up on these knives now that I've had them a while. I'm still working on my sharpening skills (luckily I work with someone who is a gun on the stones), so I don't use them as much as I could because I don't want to hassle my workmate to sharpen them too often. They stil...

Re: Satuma plum vinegar recipes

Thanks Mick, I realised I has spelled satsuma wrong just after I hit the post button  Lets just blame it on my headache and the crushing realisation that tomorrow is Monday :P Those sauces look great. I'll give them a go after next pay day. Edit: Just noticed the edit button too...time to go t...

I remember when mine looked that clean :) But after using it almost every night since I bought it 2 years ago I reckon it is allowed to be a bit dirty :p
