Bolar wouldn't handle a cook like the brisket can due to lack of internal fat but if you do low n slow till about 55-60C internal...then bump up the BBQ temps and gave it a finishing char till 65-70C internal, then it'd be good to go....should be nice. One of the purposes for a pizza stone due to it's pourous nature is to absorb the moisture and take it away from the dough so that the dough can form a crust so I've always wondered why a metal plate would work properly. Experimenting on a technique or style you haven't done before using guests as guinea pigs usually can go pairshaped, but people have known to fluke it for the first time...so.....always have plan B Buy other meats you can simply grill and keep the hordes happy or stick the local pizza joint's phone ...
