I thought that might be the case, but didn't want to risk it. The 10kg had a lot of hard fat on it that would have to be cut off anyway, so I'm not going to lose any sleep over it! Always next year for the next 20 hour brisket :) (Definitely worth staying up all night for though... couple years ago ...

Just picked up an 8kg one. They had a 10kg, but unfortunately it was to expire on Friday, and I need it for Saturday. A real shame, I would have loved some brisket left overs! (Who am I kidding, there's never leftovers...)

The trick is to only use the gas to get it going - probably 10 minutes tops, sometimes only 5-6 mins on stick charcoal, then turn off the gas. I should have paid more attention in science class... Hmm I hadn't noticed the difference but was planning on the Q2000, since it would be about $90 cheaper than the 2200. If I get one more mate to chip in, I will try for the 2200, but not sure I can afford it otherwise.

Brisket turned out great. 6.3kg, put on at about 6pm By 11pm, temp had shot up to 160 and I was preparing toast to have brisket sandwiches for breakfast. Worries faded away, however, when by 6am it was 170. 11am, 180. 4pm, 190. 6.30 and ready for wrapping at 200 :) BTW, I wrapped with the paper at 1...
