Yeah I am with Gumb re: the charcoal but maybe use a cast iron pan on the kamado so you get the best of both worlds

Thanks for the replies guys that is pretty much what I was thinking.
I think I will go with the Forequarter just to give it a try but will also order a Collar Butt just to try myself one day - but will tell the Mrs I have to get both as I am unsure of what cut to get

Yeah I have tried it awhile back - I think the Barbaro's Bros. Butchers stock this.
Personally I am preferring the Mad Hunky and the Convict Rubs (when I am being too lazy to make my own ) at the moment but the Jardines is definitely worth a taste

By flexible cooking rack, do you mean the extender rack - that gives you a second level?
