I have a set for my charcoal Weber and take the middle square piece and put it in my family Q to finish a reverse sear. Works really well, but you want temp smokin hot to get best effect. And yeah, they will only ever be clean and shiny before your first cook and then forever not shiny anymore. So ...

does wood have a use by date?

I have some wood purchased from Aussie BBQ Smoke back in Feb (i think). I any case they are probably more than 6 months old.

This might sound like a silly question, but does wood have a use by date?

Seems quite expensive mate. $20.99 per kg for brisket? Cape Grimm is only about $13. Pork neck I also pay around $17 -$19 per kg, they flogging it for $28?? Decent knife set

can somebody recommend a decent knife set? Just been struggling with some really old knives and was looking to upgrade to something better. Looking for something that can cut soft meat to bone.

thanks for the feeback guys... You still had the drip pan above the woodbox, right? Because otherwise you could get fat dripping down and igniting. Yes i was using a water drip pan. I must admit I'm not convinced by the lid theory. I never had a fire in there and was never careful with the lid... I'...

thanks for the tips guys. I read a few people saying that using woodchips in this smoker caused flareups and chunks worked better but since i have a whole bag of woodchips i tried to play it safe and made a foil pouch. So i should be able to mix the wood chips and chunks without the need for a pouch?
